Cooking Wild Duck


                  Ingredients
                  1 duck
                  Water
                  2 onions
                  Strip of bacon




                  Directions

                    1.  Wash duck really well three times.
                                                                  Wild Rice Pudding
                   2.  Put in pan breast side up with a
                      little water.                               Ingredients

                   3.  Put onions inside duck.                    ½ cup wild rice
                                                                  1 cup water
                   4.  Place a strip of bacon on the duck.
                                                                  Sprinkle salt
                   5.  Cover with foil. Cook at 400° F for half   2 eggs
                      an hour.                                    1½ cups homogenized or 2 percent milk
                                                                  ½ cup condensed milk
                   6.  Turn oven to 350° F and cook for
                                                                  ½ tsp. vanilla
                      another 2 hours.
                                                                  1/3 cup of sugar
                   7.  For the last 30 minutes, turn the breast   ¼ cup raisins (optional)
                      side down.

                                                                  Directions

                                                                   1.  Rinse rice three times or until water
                                                                      is clear.

                                                                   2.  In a small pot, mix rice in the cup of
                                                                      water and a sprinkle of salt.

                                                                   3.  Simmer until water is absorbed
                                                                      (approximately 1 hour).
                                                                   4.  In a pan, mix together
                                                                      remaining ingredients.

                                                                   5.  Add cooked rice.
                                                                   6.  Bake at 400° F for 15 minutes.

                                                                   7.  Stir and turn oven down to 300° F for
                                                                      another 15 minutes. Serve with cream.
