Chefs
James Needham
Our community includes a few expert chefs. Member James
Needham is a graduate from the Culinary Arts program of Port
Perry High School. He went on to graduate from the Culinary
Management program at Georgian College in Barrie in 1999. Here,
James talks about his favourite foods and his career as a chef:
“My favourite food to prepare is Asian cuisine. I enjoy all the high WORDS TO KNOW
heat and movement that comes with working with a wok, and
culinary: to do with cooking or
the delicious combination of sweet, sour, and savory sauces. in the kitchen
My favourite food to eat is a well-prepared medium-rare grilled
steak, with some type of surf.
“I have been working as a chef at the Great Blue Heron Casino
since February 2002. At the same time, I am testing and looking
into learning how to run my own business as a caterer. Only time
will tell if I succeed in having my own business. If I do make it,
watch for the name of Bear and Wolf Catering or a similar name
that is First Nations-related.”
Philip LeSaux graduated from the Culinary Management
program at Georgian College in 2007. He later attended the
Culinary Arts program at Northwest Community College in
British Columbia and the Meat Retail program at the Northern
Alberta Institute of Technology in Alberta. His favourite food to
prepare is an Indian taco.
